Anthony (tony) Burnipp

We are a small team of 3 full time bakers at windmills bakery .

we all work 5 days out of 6 so each have a day off in the week which is covered by our boss who is a baker .

we make all the bread , rolls , buns and cakes fresh every day .

we start at 6pm and finished around 1am ready for our packer who starts around 1-30am .

my main job is to prepare all the doughs , scale and mould both bread and rolls ,Prepare the bun dough and make all the morning goods and in between doughs make the cakes like shortbread , flapjack , and many types of biscuits . some of the shift I do some oven work and once a week I cover the oven mans day off for the whole shift .

At pipers my role was to collect , mark up and deliver newspapers to both residential and commercial properties local to Eastbourne and as far as Lewis . This was only going to be a short term thing to earn extra money as we had started a family and it was on top of my full time job but I ended up there over 20 years .

Was head baker at over fresh bakery for 6 years until the owner retired and the business folded .

I produced and over seed all bread and roll production .

i was part of a small team making all bread , roll , buns and cakes . Was there for 8 years but left for a new challenge.
