Academic Research Projects

Brewing Fermentations using Active Dried Yeast: Analysing Fermentation Performance and Flavour Stability – University of Nottingham

  • Analysed fermentation performance, yeast viability, and flavour stability in 5 Saccharomyces cerevisiae strains using serial repitching (G0–G3).
  • Found ADY showed up to 30% improved fermentation efficiency, with viability increasing from ~75% to >94%after initial adaptation.
  • Used methylene blue staining, CO₂ loss tracking, and APCI-MS to measure kinetics and flavour consistency.
  • Results supported industrial reuse of ADYin brewing, with stable performance from G1 onwards

Expression of key genes in monoterpene biosynthesis in Lavandula angustifolia under abiotic stress and hormonal treatment – University of Guilan (Published in the National Journal of Biology – 2 papers)

  • Studied gene expression in lavender (Lavandula angustifolia) under UV stress, drought, and treatment with salicylic acid (SA) and methyl jasmonate (MeJA).
  • Performed RNA extraction, cDNA synthesis, and semi-quantitative RT-PCRtargeting borneol, fenchol, and trans-α-bergamotene synthase genes.
  • Found MeJA upregulated gene expression up to 3-fold; UV also enhanced gene activity, while drought suppressed expression.
  • Results showed potential for boosting essential oil production through targeted elicitor treatments.
