  • Taking on this role was a completely new experience for me having a complex where multiple operations are I find exciting and a step towards my goal of becoming an area manager one day
  • The Complex consists of:
  • 30 lanes of Bowling with 8 of them being a VIP bowling area (great for functions)

  • Function Rooms
  • Laser Extreme
  • Sports Bar and American pool area
  • A diner area to where I had the autonomy to implement my own food menus once I have costed and trained execution to my team
  • Over 60 machines from play nation (games tech)
  • My role was very active, I liked to manage with a hands-on approach ensuring that we are firing on all cylinders so that our guests have a great experience wanting to return and we maximize our revenue
  • I would look at our marketing and make sure that we are pushing all promotions for the next three months and have the following three months in place, carrying out walk about audits for premises and structure cleaning and health and safety
  • Insuring depletion on products is correct on zonal by analyzing reports and looking into any variances or highlighted issues, making sure that all the gaming machines are working and if any faults are found there are reported for the engineer to attend
  • Also making sure that any gambling machines are kept within the correct location as per licensed activity areas
  • As a site performance, my figures year on year are very positive and continued to grow, ensuring that my foundations were in place within my first few months, enabled myself to create a team that strives for sales and enjoys what they do and put the guest at the centre of our operations

  • I was headhunted to join Whitbread to which my family and I decided to relocate, and I was pleased to be able to gain new skills by also having a 20 room Premier Inn located on site
  • I found Whitbread to be very motivated with Mystery Dinner Feedback to which happened at any time during the month and whist I operated the site we were receiving over 95% on each visit and ensured that all KPIs were met, and my green card was followed and completed
  • I found them to have a very robust system that worked very well but very robotic in the way the business operates.

  • I joined M&B as I found their premium concept to be like the Anchor and being a large company, I found job security and career development I become a GM for a signature site that hosted many celebrities' whist supporting other units that had been requested by my area manager
  • I built on the existing Sunday trade introducing live entertainments and canapés within the bar operations, offering several different event packages which help build on coffee mornings and off-peak times whilst implementing ladies at lunch activities
  • During my time gap between The Anchor and M&B, I was hired as a GM for Outback Steakhouse but within a week the company was liquidated to which I was none the wiser, by chance I became a freelance consultant looking at sites for an independent landlord in the pub and restaurant sector
  • I felt this was the right time to progress and further my skills by creating my own part time business
  • We decided to leave the couple position due to family commitments and the birth of our daughter.

  • My partner and I decided it was time to leave Outback Steakhouse to take on a site of our own
  • We were hired during the renovation stage and had input from the start
  • Complete control on hiring and training, implementing all restaurant and bar procedures and marketing to get the site ready to open

  • This is where my passion for the food industry began
  • I started in the kitchens, worked my way up to Kitchen Manager within in a short period and was selected from the USA international trainers to open new sites for the UK
