Responsible for the day to day running of the main customer facing departments of an integrated retirement community part of the exclusive Audley Villages Group. Sunningdale Park comprises109 private (1,2 and 3 bedroom apartments, 50 cover restaurant, bar, 30 cover bistro, 20 cover private dining room, extensive grounds, gardens, spa and leisure club. Full budget responsibilty for all comercial aspects of the restaurants, bar and events. Owner communications through the reception and cleanilness with housekeeping. Working closely with the facilities manager to ensure the smooth operation of the village with full Health and Safety compliance, managed Maintenance schedules, site security grounds and garden presentation. Likewise supporting the sales and marketing team to support their objectives of ensuring the village is fully occupied. In addition, liasing with the Health and Wellness team to ensure any full CQC compliance.
Reporting directly to the Castle Manager, the role encompassed the day to day oversight of weddings, banquests, conferences and specialist state rooom accommodation. Managed castle specific staffing, training, health and safety. Coordinated and cooperated with day visitor operations, engineering, estate management, contract catering and curatorial departments. Close support with the marketing and managing of special events including the world reknowned classical concerts, fireworks and light shows.
Full ownership and management with my wife of a 60 seat cafe/restaurant located in the county town on the main leisure/entertainment street. Specializing in localy sourced fresh produce delivered to the highest possible standard. Far exceeding the standards of all the local cafes, branded restaurants and casul dining outlets, the cafe earned a unique reputation for flexitarian dining. Four consecutive years of The Best Breakfast in Town, Tripadvisor Certificate of Excellence, Britain's Best Sandwich (4th place overall for Britain, 1st Place South East England).
The business survived all the external factors that affected trading between 2018 and 2022 and a good revenue and profit was achieved so much so that the opportunity to sell it was not to be missed, enabling a long holiday in Australia between May and June of 2022. Of the 19 restaurants and bars in Earl Street that went into 2020 only The Living Cafe, Nandos, Wagamama, Druids Arms and Market House pubs survived by 2022.
