I'm responsible for a team of 45 people including security, a chef brigade, several management and 30 full and part time staff.

During my 5 years at Brewhouse and Kitchen;

  • Embedded the business within the community by supporting local events and developing relationships
  • Won several awards including profit generation above budget and people development.
  • Worked closely with the owners and senior management of the business to bring their vision and brand to life
  • Delivered several external events with both wet and dry sales
  • Control margins to deliver and exceed budgeted profit
  • Arranged large scale events on and off site such as Shake and Stir, and also Craft on the coast beer festival.

The flagship of at the time SA Brains premium dining brand and boutique hotel. The Boathouse, Bath was set along the river Avon. Consisting of 450 cover terrace on the water, 9 hotel rooms and 180 cover restaurant and bar area. Responsible for up to 50 staff and management.

During my 3 years at the Boathouse;

  • Introduced and delivered several weddings for up to 150 covers
  • Developed menu's to suit seasonality
