• Responsibilities on the floor included waiting – taking orders from guests (table service), setting up tables with cutlery, water jugs, napkins, taking food from the pass to the guests. Other responsibilities on the floor included refilling sauces, changing candles, cleaning tables and wiping down tables, closing the restaurant, making sure there’s no rubbish leftover anywhere
