  • Prepared 3 types of canapés for a Christmas gathering of 70 attendees. I organised ingredients and prepped food in advance and delivered it on time and clients were hugely satisfied.

  • I had the best 3 months of my life at the Ballymaloe cookery school. I've learnt so much and have left with a determination to cook in professional kitchens. The course has massively improved my ability to cook including good knife skills and knowledge of techniques across a variety of cuisines. I have left with a true love of cooking and the desire to create great food.
  • The 12-week course included a pop-up dinner on week 9 where the students prepare and completely organise a 3-course dinner, also including canapés and petit fours. I was part of the canapé team, and then aided with the plating of the mains. The event gave me a great idea of what it would be like to be catering for a busy restaurant under pressure.
