  • Began working as a kitchen assistant and worked my way up to a chef, then junior sous, and as of now sous.
  • Developed good skills such as knife skills, food knowledge, working with different equipment, safety protocols, working under pressure, time management and people management.
  • Opening and closing responsibility. Trusted keyholder.
  • Helped to build a team including interviewing staff for the kitchen. I have also trained many new staff in the company for head chef and sous chef roles who were joining other sites.
  • Worked closely with the front-of-house team, ensuring the best service possible. As well as delegating my staff to help run smoothly and efficiently.
  • Handled the head chef role as our site did not have a permanent one. This included ordering, accepting and handling deliveries, writing rotas, counting and inputting stocks, transferring stocks between sites, keeping the team in check and holding standards high.
  • I travelled to help out at other sites which included Nailsea and Clevedon. I assisted in opening up the Nailsea site, working from when it was still a building site to up and running. This included moving things into the kitchen setting everything up and preparing and training new staff to help it run.
  • I have travelled up to a Brightside on the A1, (this is another branch inside lounges). They had just opened and I provided help to help things run smoothly. This included learning a new menu inside a weekend, running the kitchen and helping to train others.
  • I was invited to work alongside the head of food development in a cook-off for the operational and general managers. This consisted of cooking the new menu so they could taste it, it was then explained to them what it should look and taste like as well as how to build it themselves.
